My label says 23g of protein in 112g of chicken. I just read somewhere that all food labels give numbers for the food being raw.

After you cook the chicken you WILL lose water weight... so that 8 oz. of RAW chicken will weigh roughly 5 oz or so... at that point you are DONE.
