Let's just all agree that Crock-Pot soup recipes are the best. While they do require a little bit of planning, most are as simple as dumping in the ingredients and letting the slow cooker take over.
Carefully remove the pot from the slow cooker and use a hand-held blender to blitz the soup until smooth – watch out for splashes. Stir in enough milk to reach your preferred consistency (see Tips).
Add the milk and purée the soup in a blender or food processor. Taste and adjust seasoning. Serve sprinkled with a few freshly chopped herbs or some of the following garnishes.
